Low Carb Recipe for Zucchini Snacks


Served hot or cold these light zucchini squares have a hint of dill, and taste so good you will want to make more.

4 cups finely chopped or shredded zucchini
2 eggs
5 egg whites
1 1/2 cups grated mozzarella cheese
1 cup finely chopped onions
1/2 cup flour (! use whole wheat)
1 tablespoon dill
1/4 teaspoon baking powder

Preheat oven to 350F. Spray 9x13 pan

Mix all ingredients into a bowl, and spread into 9x13 pan. Bake 30-35 minutes until toothpick comes out clean. Cool 5 minutes, Cut into 18 squares.

Serve hot or cold.
