I made this great vegetarian meal for dinner the other night. I choose to use my leftover mixed vegetables instead of only broccoli. It was quick to throw it together and then just let it cook for about 1 hour. Makes 6 servings.
2 cups fresh Broccoli or 8 ounces frozen
Olive Oil
2/3 cup Bread Crumbs
1 tablespoon Parmesan Cheese
1 1/2 cups Cottage Cheese, low fat
1/4 cup Skim Milk
1 cup Cheddar Cheese, grated
6 Egg Whites
1/2 teaspoon Tarragon
1/4 teaspoon Black Pepper
Preheat oven to 350F. Spray 9 inch pie pan with oil.
Steam vegetables for 5 minutes, then coarsely chop and set aside.
Mix Parmesan and bread crumbs, then press into bottom on pie pan.
In a medium bowl, mix remaining ingredients. Stir in vegetables, and pour into pie pan.
Bake 55-65 minutes, or until set. Serve.
